Keep bitesized snails in a glass covered aquarium for 24 to 72 hours
to purge. Drizzle with sizzling bacon fat (it's brutal, but the
Basque swear by it). Remove the snails from their shells with a bent
pin, brush the nasty bits off. Put one or two snails in each half of
'cesca's morels, cover with garlic butter and a sprinkle of parsley.
Bake in a hot oven until sizzling. Invite Portland friends for dinner.

I prefer mine simply sliced and sauted in butter with a bit of garlic.  I
add a splash of good sherry (not the cooking sherry crap, I use proper
drinking sherry) when they've been cooking for a bit, and this gives a
wonderful delicate flavor note without overwhelming the mushroom's
subtleties.
